I am mounting an old tube amplifier and in the schematic I found a double electrolytic capacitor in the filter stage. Can I use two separate capacitors instead, since it is very difficult to find the double types?

In old tube equipment it is common to find double and even triple electrolytic filter capacitors in the sources. They are capacitors of high values and voltages that can reach 600 V. These capacitors can no longer be found more easily in the specialized trade. The solution for those who want to make a project that requires these capacitors at source is to use separate electrolytes, taking care to keep the negative terminals as short as possible in the connections to the chassis so that no snoring will occur.
