“I have a small electric oven in which there is a resistance wound in a spiral. I am told that it is an inducing element that can affect food. It is true?"

There is no relationship between a heating element (resistance) wound in a spiral and the high frequency coils that we find in induction cookers. The resistances of these furnaces operate directly with the current of the low frequency energy network that does not produce dangerous fields as they form small inductance coils. They are rolled up to take up less space and distribute heat better. The current heats the wire that emits infrared radiation (heat) which is the same radiation that a stove produces when burning gas or a piece of coal when heated.
